You should try gravadlax Steve, I make my own along with pickled herrings, the gravadlax recipe was originaly a salmon recipe but you can use it for any oily fish and it's always great I use it for sea trout and rainbow trout which I catch myself. Although I catch brown trout [ not on purpose ] I never kill them. Dave H
